The Eastern Humpback Dolphin - one of the most elegant marine creatures in Australian coastal waters - is etched into the label of Twilight Blue. As the liquid level drops, the dolphin rises. Pour a glass and watch it emerge. Pour another and watch it surface further. By the time the bottle is empty, the dolphin is fully revealed - a reward for every pour, and a reminder of the coastal waters this spirit was born beside.

What makes it change colour — and why it does it twice
Butterfly pea flower is one of nature's most remarkable botanicals. Distilled into Twilight Blue, it produces the spirit's natural deep purple - no artificial dye, no colouring agent, no intervention. Just a flower doing what it has always done.
Then the pour happens.
Add tonic - acidic - and the pH shifts. The purple transforms to vivid pink before your eyes. Add soda or sparkling water - closer to neutral - and the purple deepens to a brilliant blue. Three colours from one botanical. Purple at rest. Pink with tonic. Blue with soda.
No artificial colour at any stage. Just butterfly pea flower responding to the chemistry of whatever you pour - doing exactly what nature intended, every single time.
What's in the glass
Native finger lime from the Queensland rainforest, one of earth's oldest cultivated citrus fruits, adds a bright, zesty burst of citrus that is completely specific to this country and this landscape. Hibiscus brings depth and a gentle tartness. Lemon myrtle, aromatic, unmistakably Australian, lifts the nose with a clean, coastal brightness. Rose adds a delicate floral softness that lingers from the first sip to the last. Orange peel brings a warm citrus sweetness that ties every botanical together. All of it rests on a base of certified organic Queensland sugarcane: naturally soft, naturally sweet, carrying no grain heat.

Tasting Notes
The nose opens with butterfly pea flower, rose, and native finger lime, floral, bright, and quietly extraordinary. On the palate, hibiscus, lemon myrtle, and orange peel unfold with gentle citrus warmth and a soft floral depth, layered with the natural sweetness of the sugarcane base. The finish is long and soft, with a lingering floral elegance. This is what the Sunshine Coast coastline tastes like, wide open, clean, and unmistakably Australian.
Serve
Pour over ice and watch the purple settle, and watch the dolphin begin to emerge. Add tonic and watch it blush to pink. Add soda and watch it shift to brilliant blue. Absolutely! We're super passionate about crafting our own spirits. Our distillery is where we get to experiment with all the incredible Australian botanicals nature has to offer. We handle everything ourselves, from fermenting the organic sugar cane base to the final distillation. It's a hands-on process, and we love every minute of it!
